For the protection of the public health, the Environmental Health Section of the Wayne County Health Department is mandated by state law to conduct unannounced inspection of certain types of establishments to rate their compliance with sanitation rules. Restaurants, food stands, meat markets, and school lunchrooms are inspected quarterly. Hospitals and similar institutions are required semiannual inspections. School buildings and motels are inspected once a year.

The sanitation grade of these establishments are based on a system of scoring wherein all establishments receiving a score of at least 90.0 shall be awarded Grade A; all establishments receiving a score of at least 80.0 and less than 90.0 shall be awarded Grade B; all establishments receiving a score of at least 70.0 and less than 80.0 shall be awarded Grade C. Permits are revoked for establishments receiving less than 70.0. Establishments may request a reinspection to raise their letter grade.
